Brown Sugar Ginger Roasted Sweet Potatoes & Shallots

Serves 8

8 sweet potatoes, peeled and cut into 1″ cubes

8 shallots, peeled and halved

1/3 cup extra-virgin olive oil 

2/3 cup Brown Sugar Ginger Glaze Saucey Sauce

Sea salt and fresh ground black pepper

Method

1.     Preheat the oven to 375°.

2.     In large bowl combine sweet potatoes and shallots.

3.     Add olive oil, sprinkle with salt and pepper; toss well to combine. 

4.     Add Brown Sugar Ginger Glaze and toss well.

5.     Spread potatoes and shallots in single layer on rimmed baking sheet.

6.     Bake for 25 – 30 minutes or until tender. Stir halfway through.
