Lemon Roasted Cauliflower

It’s cold out! That means you can hibernate for the rest of winter, right? Wrong! Treat yourself to this warm & hearty recipe that’s light & healthy at the same time. And roasting cauliflower brings out its natural sweetness – so go ahead, eat up! It’s good for you 

Serves 8

5 cups cauliflower florets

2 tablespoons parmesan

1/4 cup, pine nuts

1/4 cup Fresh Lemon Saucey Sauce


1.     Preheat oven to 400 degrees Fahrenheit 

2.     Spread cauliflower out in one layer on a large roasting sheet

3.     Toss cauliflower with Fresh Lemon Saucey Sauce

4.     Roast in oven for 30 minutes, or until the cauliflower is soft and browned

5.    Sprinkle with parmesan and pine nuts
