Start off 2015 right with an easy and healthy meal that will take you no time to prepare, thanks to the help of coleslaw mix, shredded carrots, and frozen edamame from the grocery store. Add some Saucey Sauce for a dish that tastes great and is so simple to prepare!
Serves 4
2 cups shredded cabbage (we recommend you buy some coleslaw mix, that will make preparing this ingredient much easier)
1/2 cup shredded carrots (again, feel free to buy them pre-shredded)
1 cup cilantro, finely chopped
1 jalapeño pepper, seeded and cut into thin slivers
1 cup, edamame, thawed if frozen
1/2 cup roasted peanuts
1/2 cup scallions, chopped
3 tablespoons, Sweet Ginger Saucey Sauce
Method
1. Combine all ingredients except the Sweet Ginger Saucey
2. Drizzle in 3 T of the Sweet Ginger Saucey Sauce
3. Garnish with a little extra cilantro or scallion
NOTE: Any leftovers can be refrigerated for about 4 days. Also, for a bit of extra heat, leave the seeds in the jalapeño or add a few red pepper flakes to taste
