For an easy weeknight meal, we can always count on chicken! Here we add spicy ketchup for a deceptively simple – and deceptively delicious – dish
Serves 4
3 cloves garlic, minced
1 tablespoon fresh ginger, finely chopped
1 small onion, chopped
1 tablespoon Sweet Jalapeño Ketchup
1 lb boneless skinless chicken thighs
1 tablespoon olive oil
2 tablespoons brown sugar
Method
- Saute onions in olive oil. Add the garlic and ginger. Keep cooking until the onions are soft
- Mix in Sweet Jalapeño Ketchup and add chicken
- Simmer on low heat for 40 minutes
- Add salt and freshly ground pepper to taste. Garnish with chopped scallion
