Saucey Stewed Chicken

For an easy weeknight meal, we can always count on chicken! Here we add spicy ketchup for a deceptively simple – and deceptively delicious – dish

Serves 4

3 cloves garlic, minced

1 tablespoon fresh ginger, finely chopped

1 small onion, chopped

1 tablespoon Sweet Jalapeño Ketchup

1 lb boneless skinless chicken thighs

1 tablespoon olive oil

2 tablespoons brown sugar

Method

  1. Saute onions in olive oil. Add the garlic and ginger. Keep cooking until the onions are soft
  2. Mix in Sweet Jalapeño Ketchup and add chicken
  3. Simmer on low heat for 40 minutes
  4. Add salt and freshly ground pepper to taste. Garnish with chopped scallion
