Spicy Crispy Collards

Not realizing as kids we were eating collard greens, we loved our mom’s Canh Cai La Xanh. This Vietnamese Collard Greens Soup is nice and spicy – just how we like it!

Now instead of making a big pot of soup, we get our collard fix with this quick and easy side dish!

1 bunch of collard greens, trimmed and washed
1 shallot, sliced
1 small bag of crunchy Asian noodles
2 teaspoon of oil (any kind)
3 tablespoons of Spicy Garlic Saucey Sauce
2 tablespoons crispy fried onions

Method

  1. In small pan, heat Oil on medium-high heat
  2. Add Shallots, cooking 4-5 mins or until brown.
  3. Add Collard Greens and saute for about 5 minutes or until wilted.
  4. Turn off heat, stir in Spicy Garlic Saucey Sauce and top with Crispy Onions!
