MAPLE GINGER CHICKEN THIGHS

This easy & delicious recipe will tantalize your palate with the incredible flavorful ginger zing!

 

SERVES 8

1 shallot, finely sliced

¾ cup apple cider

½ cup dark pure maple syrup

2 tablespoons of Brown Sugar Ginger Glaze Saucey Sauce

1 teaspoon chopped fresh thyme leaves, plus a few sprigs for the roasting pan

¾ teaspoon kosher salt

½ teaspoon ground black pepper

8 bone-in chicken thighs

3 medium apples, peeled, cored and quartered

 

METHOD

 

  1. In a bowl whisk the shallot, cider, maple syrup, Brown Sugar Ginger Glaze Saucey Sauce, chopped thyme leaves, kosher salt & ground black pepper.
  2. In a large Ziploc bag combine the marinade & the chicken thighs. Seal and shake the bag to make sure the meat is well coated & refrigerate for 12-24 hours, turning the bag a few times.
  3. Preheat the oven to 400 degrees & place in a baking dish the chicken & arrange apple slices & thyme sprigs around the chicken.
  4. Pour the marinade over the chicken and bake the chicken for about an hour or until the chicken is fully cooked. Baste the chicken with the marinade a few times during the cooking process. Remove from oven, let cool a few minutes then serve.
