Sweet Ginger Marinated Flank Steak

Winter is officially here!

With snow flurries in the air we have finally had to abandon any hope of one last go round on the grill and face the reality that we will cooking inside from here on out. But, not all hope was lost. It is still possible to get well caramelized meat and vegetables inside on our gas range.

How?

Cast iron and some high heat.

So we pulled out a summer classic to warm us up: our Sweet Ginger Marinated Flank Steak, which gets a little boost from the addition of toasted sesame oil. The sugar from the marinade helps to give the steak a nice sear on the outside while the inside remains moist and rare. Flank Steak’s composition makes it a great cut for quick cooking. In order to get the most tender pieces possible, be sure to cut against the grain.

Sweet Ginger Marinated Flank Steak 

Serves 4-6

Ingredients

1 2 lb flank steak, trimmed of fat
1 cup Sweet Ginger Sauce
2 tablespoons toasted sesame oil
2 scallions, diced (optional)

Method

In a re-sealable bowl, add flank steak, Sweet Ginger Sauce, and  1 tablespoon of the toasted sesame oil. Seal and set in the refrigerator to marinate for at least one hour. Before cooking, remove the steak from the marinade and allow to come up to room temperature. Heat a large cast iron skillet over high heat, and add the remaining tablespoon of sesame oil. Once the pan is smoking hot add the flank steak and sear on each side for 5-7 minutes. Do not move the steak once its in the pan! Before cutting, let the steak rest for 10 minutes. For a medium temperature cook for 7-1o minutes on each side. Scatter the diced scallions across the steak before serving. Enjoy!
