Asian Nachos – two ways!

Inside Out Nacho Asian Slaw

Serving size – 6

1/4 cup extra-virgin olive oil

3 tablespoons minced ginger

1 tablespoon minced garlic

4 tablespoons mirin, or white wine

1 teaspoon sesame oil

1/4 cup rice wine vinegar

1 cup thinly sliced red cabbage

1/2 cup thinly sliced green cabbage

½ cup chopped fresh cilantro

½ cup thinly sliced red onions

½ cup thinly slides colorful bell peppers

3 tablespoons of Fresh Lemon Sauce

Crushed nacho chips

  1. In a small saucepan add 2 tablespoons olive oil and garlic, lightly saute until lightly brown.
  2. Add 3 tablespoons of Fresh Lemon Sauce and mirin. Saute for 5 minutes and remove from heat.
  3. When cool, whisk in olive oil, sesame oil and rice wine vinegar.
  4. Mix all vegetables in a bowl and toss with dressing.
  5. Garnish with crushed nacho chips, lightly crushed, peanuts and lime wedges!! For extra savoriness, drizzle a bit more Fresh Lemon Sauce!!

Ginger Salmon Nachos

Ginger Salmon Nachos

1 pound salmon fillets

4 tablespoons of Sweet Ginger Sauce

large tortilla chips

15-oz. kidney or black beans, rinsed and drained (or use a mixture of beans lentils, kidney and black beans)

about 1 c. shredded cheese blend of your choice

for toppings, use guacamole, sour cream, shredded lettuce or cabbage, sliced jalapenos, or diced tomatoes,

  1. Preheat oven to 375 degrees. Brush Sweet Ginger Sauce over meat side of salmon fillets. Place on foil-lined baking sheet and bake for 20 minutes.
  2. Meanwhile, line another baking sheet with silicone baking mat or foil and cover evenly with a layer of tortilla chips. Sprinkle black beans evenly over chips.
  3. Remove salmon from oven and shred or chunk with fork, leaving skin behind. Drain fish for a few minutes on paper towels if desired. Arrange shredded salmon evenly over chips and beans. Sprinkle evenly with cheese. (You don’t need lots of cheese, just enough to hold it all together.)
  4. Bake in preheated oven for 8-10 minutes, until cheese is melted. Serve with your choice of toppings and YUM!!
