Ahh the day after Halloween!

A day when all the spirits return to the underworld, and us remaining humans spend the morning (or the day) hungover and wishing we were dead. If you Halloween-ed hard last night and partied like the undead we’ve got a remedy for your return to the realm of the living, and its probably been sitting on your doorstep this whole time. That’s right, good ‘ol Jack-0-Lantern. Well, maybe not the week old latern itself, but the nutrient rich seeds inside. Pumpkin seeds are full of good fats and essential minerals like zinc, magnesium, and iron. These essential minerals help to keep us feeling vital and ready to take on the world. They’re easy to make, and incredibly tasty when roasted and slathered in our Sweet Ginger Brown Sugar Glaze. Restoration is just around the corner!

Sweet Ginger Brown Sugar Roasted Pumpkin Seeds

Ingredients

Pumpkin Seeds from 1 Medium-sized Pumpkin, Cleaned
2 Cups Water
2 Tablespoons Olive Oil
2 Tablespoons Sweet Ginger Brown Sugar Glaze

Method

Preheat oven to 350 degrees. In a medium sized saucepan over high heat, boil pumpkin seeds for 1o minutes. Drain, and pat seeds dry. Toss seeds in an oven-proof pan with olive oil and roast in pre-heated oven for 10-15 minutes, until seeds are sizzling and beginning to brown. Once browned, remove seeds from the oven and toss with Sweet Ginger Brown Sugar Glaze. Return the seeds to the oven and roast for another 10-15 minutes until they are crisp, and golden brown. Enjoy.
